Avocado Mayo Spread
This is a great unprocessed alternative to mayo. There are so many ways to make use of this wonderful, light alternative. It can be used instead of mayonnaise in tuna, chicken or egg salad or spread some on your chicken breast to name a few. The possibilities are endless!
2 ripe avocados, halved, pitted, scooped out of skins, and cubed
Juice of ¼ lemon or lime (based on preference)
¼ teaspoon garlic powder
¼ teaspoon black peper
¼ teaspoon sea salt
3 Tablespoons light extra virgin olive oil
Add avocados to food processor and process until smooth. Blend in the oil and lemon or lime juice, then the garlic powder and season with sea salt and pepper.
Use this delicious avocado mayo spread in place of regular mayonnaise – it’s particularly tasty in whole grain sandwiches with tomato and a fried egg. It also makes a wonderful dip for baked crackers.
